QUALITY AND SAFETY POLICY
In Pesca Azteca we gather qualified personnel using cutting edge technology, competitive costs and strategic alliances with our value networks, adopting our safety, quality and continuous improvement management system as a philosophy in the development of our processes and daily activities, so that the Yellowfin tuna that we catch, store, unload and market complies with legal and regulatory requirements and safety and quality standards required by national and international markets.
We adhere to strict compliance with the HACCP plan that includes temperature monitoring and control both in the ship and remotely, ensuring total control of variations in critical points of the fishing process and traceability in all the caught fish.
Our fishing method is based on the capture of the adult Yellowfin Tuna with average weights of 20 kg per piece, through the search, location and catch of the mature tuna school, guaranteeing the sustainable reproduction of the species.

The proper handling of this size of Yellowfin tuna on board, coupled with the impeccable state of maintenance and refrigeration of the tanks inside all the ships, guarantees the unloading of a round, whole, frozen and without markings, suitable for the most demanding markets of canned and frozen products.

Our main product is frozen whole tuna, of which 96% is yellowfin tuna in its different types of species that are skipjack and bonito where the weight ranges from 1 to more than 60 kilograms, always seeking the highest quality and safety standards, fully meeting with the needs of any industrialization process.
YELLOFIN TUNA
Frozen at -18°C (raw consumption)
The fish that is frozen at -18o C has great benefits, since the enzymatic and bacterial activity that is activated when the tuna dies is stopped at this temperature.

This type of freezing provides our tuna and our clients properties such as freshness, flavor and texture that are very close to those of fresh or recently caught fish, moreover the guarantee of being able to market it as raw, already complies with European directives for deep freezing at -18o C.

COMPLIANCE WITH REGULATIONS
During catch, conservation and storage, safety and quality parameters are adequately controlled, monitoring the cold and custody chain at all stages.
Our product meets a series of specifications in accordance with the following regulations:
NOM-242-SSA1-2009: Products and services. Fresh fishery products, chilled, frozen and processed. Health specifications and test methods.
NOM-251-SSA1-2009: Hygiene practices for the processing of foods, drinks or food supplements.
Reglamento (CE) No 466/2001: From the commission of March 8, 2001, that establishes the maximum content of certain contaminants in food products.
Reglamento (CE) No 1441/2007: From the commission of December 5, 2007, that modifies the regulation (CE) No. 2073/2005 relative to the microbiological criteria applicable to food products.
This product complies with each and every one of the applicable regulations and is produced under a HACCP system.
